    Simple LOX

    Use one filet skinless salmon. Cut to 6" pieces. Place in one large ziplock bag. Add one cup brown sugar and one cup kosher salt. Shake well and bag so the sugar and salt mixes, place in refrigerator overnight turn once if you can. Rinse well and pat dry.

    If you want to make a cream cheese spread, put a block of cream cheese in the microwave at 40% power for 2 minutes. Mixing in small chunks of salmon LOX and refrigerate overnight.

    Great on bagels.

    Now you've done it.
    My wife and her family love it but I could never get used to raw fish. Of any kind. Just bring on the brisket.
